This is a regular bowl of soup in Uzma’s house. Really easy to put together and makes good use of her bone broth that she usually has a stash of in the freezer.  She thinks you could put pretty much any veg in to the mix. You could even try adding some beans / lentils.

Ingredients

2tbsp veg oil
1 large onion sliced
1 large potato chopped
2 celery sticks chopped
2 x carrots sliced
5 cloves garlic chopped
1 ltre broth/ stock
1/2 can chopped tomatoes
Salt and pepper
Sprinkling of chilli flakes
2tsp bouillon powder
Handful of fresh chopped coriander
Grated cheese to garnish

Method

  1. Heat oil
  2. Add onion, potato, carrots, celery and garlic.
  3. Add seasoning and spices, saute then cook on medium heat for about 10 mins.
  4. Pour in broth / stock and tomatoes, bring to boil.
  5. Reduce heat, simmer for 30 mins partly covered.
  6. Add more seasoning if needed.
  7. Add coriander.
  8. Serve topped with grated cheese.
